How long will the sunset last on May 6th 2011 in St Petersburg, FL?

I am planning the time of our rehearsal dinner. The venue is amazing at sunset.The Hurricane restaurant if you are familiar with St. Pete. I would love for my out of town (Brooklyn) guests to enjoy a Beautiful gulf of mexico sunset. I have found online that the sun goes down at 8;07pm that evening. Your answers and suggestions please.
